Chia seed has been enjoyed for centuries by ancient cultures in Central America as a key part of their diet and traditional medicine. The chia seed is an abundant source of essential fatty acids (EFAs), and the Omega-3 to Omega-6 ratio of chia’s EFAs is in the ideal balance recommended by nutrition experts. Approximately 60% of chia seed oil is alpha linolenic acid (ALA), compared to less than 10% of this important Omega-3 in other leading alternatives such as soybean oil and canola oil. Chia is also a robust source of protein (more than 20%) with all of the essential amino acids.
Chia has many advantages over other EFA-rich seeds such as flax that can go rancid. In particular, chia contains a wealth of natural antioxidants that provide a nutritional boost and help it naturally preserve freshness and shelf life. Unlike flax, you don’t need to grind the chia seed to utilize and free up the nutritional value. When introduced to fluids the seeds form a fascinating gel which creates a barrier between carbohydrates and the digestive enzymes that would break them down. This causes the carbs to be converted to glucose at a slow and steady rate. The water-retention provided by the chia seed gel also helps the body maintain proper hydration – a nice feature for athletes in particular. Chia seed is gluten-free and has not been found to cause reactions for people with food allergies or sensitivities.
Chefs love chia, too. Due to its very mild nutty flavor, chia is “taste neutral” and therefore easy to blend into a wide variety of recipes.
