This three-hour class, the second of a five-part raw food preparation series from May to September, focuses on the countless benefits and preparation of recipes focusing on powerful healing properties of imported and local super foods.

Background. Seattle-born Mona Lisa was raised in Austria in the small city of Salzburg. As the daughter of an Austrian butcher coming from a long line of Innsbruck butchers, it is ironic that after years of personal research, self study and experimenting with numerous diets, Mona evolved to raw vegan foods as her personal nutritional path. Mona Lisa is a sought after face in the modelling world but is now very selective of her projects to ensure they align with her ethical goals as a health educator.

Mona has modeled in numerous TV commercials, magazines and print ads locally and abroad but she is most proud of being an endorser/health model for THE FARM at San Benito, a pioneer and award winning raw food resort in South East Asia. She is also a professional athlete endorser for the prestigious Aloha Boardsports Surf Team representing Billabong Philippines as well as VIBRAMS five finger shoes as a model/athlete.

Mona Lisa being as comfortable behind the scenes as she is in the spotlight, attended culinary academy in Austria as well as theatre costume design school. For numerous seasons she worked rigorously on theatre productions for The Salzburg Opera House. Eventually Mona started to combine her conventional culinary training with her two loves for creative art and healthy nutrition. She began to experiment, artfully concocting scrumptious, original, vegan raw/cooked dishes and baked goods for her family and friends who were also interested in eating for health.

Mona being no stranger to the pressures of the superficial modeling world, struggled for years with yoyo dieting. She would lose weight dramatically on one particular fad diet, only to have it rebound back to her over the next few weeks or months, sometimes putting on more weight then she began with. Added to which she was always HUNGRY and CRAVING on these popular eating plans.

After years of experimenting with countless diets to enhance her modeling/athletic career, it is Mona’s belief that the raw food lifestyle is the simplest, healthiest, most satisfying way to detoxify the body and obtain/maintain a slim figure, great skin quality and with the bonus of being the most environmentally friendly way of eating. (NOTE: The carbon footprint of eating this way is significantly smaller than the standard, cooked, American/Filipino diet) Mona also discovered that raw natural whole food has a balancing effect on the emotions. Cravings and hunger pangs cease to be an issue and there is natural inclination towards a more spiritually conscious life.

The Result. Now a Certified Raw Food Chef and Health Coach Mona Lisa Neuboeck apprenticed under Elaina Love who has trained thousands of raw food chefs through the internationally renowned raw food academy ‘Living Light Culinary Art institute’ in Fort Bragg, California. Soon after her raw chef certification, Mona Lisa attended a course with the living legend and raw food expert Rabbi and Dr. Gabriel Cousens, M.D., founder and director of the Tree of Life Rejuvenation Center in Arizona, where thousands of so called ‘incurable’ diseased patients (ranging from heart diseased, diabetics and cancer patients) regained their health under alternative treatment with Dr. Cousens. Mona Lisa takes great care in applying the latest nutritional science to her raw food education classes, constantly updating information based on Dr. Gabriel Cousen’s research. Mona now provides vegetarian/vegan/raw food consultancy services to empower you in your own kitchen!
